Apple Pie Cups

I LOVE this time year. Not only does the weather get nice and breezy and the anticipation for boots, and scarves, and pumpkin, and all that is cozy is in the air – it’s also a month packed with action!!!

And by action I mean holidays aka Rosh Hashanah and Sukkot. Which means lots of time with family and enjoying good food.

There used to be a time where this excitement was mixed with stress and anxiety. I would completely obsess and worry about how I would deal with all the food and did my best to psych myself out that this year would be different. That this year I would leave the meals feeling good instead of guilty and bloated.

Every year I felt failure when I’d up going all out on the food – I mean, complete checkout! – and feeling miserable! Except what I learned later in life is that It wasn’t because something was wrong with me. It was because I had the wrong mindset and the wrong tools to deal with holiday eating (and food in general).

Now I have 100% trust in myself to eat in a way that feels good. The only food thoughts I have right now are related to excitement. Like enjoying these Apple Pie Cups!

Who am I kidding – I already did! 2 batches I might add! They are SO good and if you love apple pie, you’re gonna love these. I hope you make them and enjoy it!

Apple Pie Cups


  • 3 gala or granny smith apples, chopped into 1 inch cubes
  • 1 tbsp coconut oil, melted
  • ¾ tsp cinnamon
  • 2 tsp vanilla extract
  • 13 medjool dates, pitted
  • ¾ cup almond milk
  • ½ cup almond milkFor toppings:
  • Coconut whip cream
  • Walnuts, chopped
  • Optional: cinnamon sticks


  • Place apples, coconut oil, and cinnamon in medium sized pot or pan. Cover and cook over low heat for 20-25 min, stirring every few minutes, until tender. Set aside and allow to cool.
  • Meanwhile, place dates and ¾ cup almond milk in a food processor and blend until smooth, about 5 minutes.
  • When apples are ready, add the date mixture, the rest of the almond milk, and vanilla, and mix until combined.
  • Place apple mixture into 4-oz serving dishes, top with coconut whip cream, walnuts and a cinnamon sticks. Enjoy!

Makes 4 to 6 4-oz cups
*can be made 3 days before and stored in fridge.
