Strawberry Baked Oatmeal
Listen, I want breakfast to be easy – but also delicious! This recipe is exactly that. Bake it at the start of the week and you have breakfast ready for you for the next 5 days. It’s loaded with fiber for a heart healthy and filling meal. Top it with some greek yogurt and fruit for extra protein and nutrients, drizzle some maple syrup and your day is off to an energizing start.

Strawberry Baked Oatmeal
- 3 cups rolled oats
- 2 eggs
- 1.5 cups milk
- ¼ cup almond butter
- 1 tsp vanilla
- ⅓ cup maple syrup
- 1 tsp baking powder
- ½ tsp cinnamon
- 4 fresh strawberries, stems removed and sliced
- Preheat oven to 350 degrees
- In a large bowl whisk together eggs, milk, almond butter, vanilla extract, maple syrup,, baking powder, and cinnamon.
- Fold in the rolled oats.
- Pour mixture into greased 10 inch round baking dish. Layer the sliced strawberries on top and bake 25-30 minutes (it will vary depending on your oven).
- Remove from oven and allow to cool for 15 minutes.
- Cut into desired amount and top with yogurt, fresh berries, a drizzle of maple syrup, and sliced almonds. Enjoy!
- Store, covered, in the fridge.
