Food freedom isn’t just freedom to eat cakes, cookies, and pasta. It’s also have freedom to eat vegetables because YOU want to! 

One of the biggest surprises (more like joyful shock!!) my clients have is when they realize that they ate a salad because they wanted to AND they enjoyed it. They were able to choose anything in the world and they willingly chose veggies. ⁠

 

RECLAIM THE VEG, my dear. It was never diets to own. Healing your relationship with food means also healing your relationship with vegetables. Enjoy them with intentions of self care from a place of self worth, not lack. ⁠

 

And if you’re in the mood for vegetables, try this delicious Tropical Halloumi Salad recipe! I had the original from a local cafe and just knew I needed to recreate it. It’s so good, you’ll want to add it to your menu!

Tropical Halloumi Salad

Ingredients:

  • 3 heads lettuce OR 10 oz spring mix greens
  • 2 sweet potatoes, cut into 1-inch cubes
  • 14 oz halloumi cheese, cut into 1-inch cubes
  • 1 mango, cut into 1-inch cubes
  • 1/2 cup roasted almonds OR candied pecans, roughly chopped
  • 1/2 cup golden raisins
  • 1 avocado, cut into 1-inch cubes
  • 3 tablespoons olive oil

Dressing Ingredients:

  • 1/2 cup mayo
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons maple syrup
  • 1 teaspoon soy sauce
  • Juice of half a lemon
  • Salt to taste

Directions:

  • Preheat oven to 425 degrees.

  • Toss sweet potato cubes with 2 tablespoons olive oil and salt to taste. Spread out on a parchment lined baking sheet. Bake 15 to 20 minutes (until tender and cooked through).

  • Meanwhile, prepare the cheese. Heat a medium size pan and drizzle with 1 tablespoon olive oil. Cut cheese into 1 inch cubes and saute until golden brown on each side. Watch the cheese carefully because it can easily burn.

  • Once the cheese and sweet potato are ready, combine with the lettuce, mango, raisins, avocado, and almonds.

  • Whisk all dressing ingredients together until smoothly combined.

  • Toss salad ingredients with the dressing (use the amount of dressing you prefer) and serve. Enjoy!
